Deep Fried Chicken Raviolis


Good Evening Everyone, these really do not look like your average raviolis, but they are still really good. I made this recipe awhile back, and J LOVES them. I top them with shredded Parmesan and we dip in marinara sauce. I hope you enjoy making these. They are time consuming.

Ravioli Dough

2 Eggs
1/2 Cup Water
1/4 C Olive Oil
1 Tsp Salt
Sprinkle of Pepper
4 C. Flour

In a bowl mix eggs, water, olive oil, salt and pepper. Mix till combined. Add 3 cups of flour mix it up till its a nice feeling dough. If its stickier, then add the 4th cup. Combine and set aside. 

Chicken Mixture
* I used leftover shredded chicken from when I made the roasted chicken. However you can just bake boneless skinless chicken breasts and shred it up. Another tip is if you have a stand mixer then combine all ingredients and put it on medium speed. It chops it nicely**

1 Cup of Shredded Chicken
2 tablespoons Ricotta Cheese
1 Tablespoon of Sour Cream
Sprinkle of Shredded Parmesan
Couple handfuls of Italian Shredded cheese or Mozzarella
Oil for deep frying

In a bowl combine your shredded chicken, ricotta, sour cream and cheese. Mix well. Set aside.

Take your Ravioli dough and roll it out on a floured surface. Take a cup and cut your circles out. Do not make it to thin or it'll rip when you fold it over.  With each circle you need to stretch it out a bit and put a tsp of the chicken mixture in each. Take a lil finger of water to use as a sealant. So you can crimp the edges. Put all of them on a cookie sheet. Sprinkle with garlic powder.  Make sure your oil is heated. Once its ready place your raviolis in there and fry them for 5 minutes. Take out and lay on a paper towel.  Top with some of the shredded Parmesan.  You can dip them in marinara sauce.
