Cucumber Salad, 1k and some added thoughts

Good Afternoon Everyone :-)
We got a new TV or well new to us. A coworker of J's was giving away a tv and we needed one. So of course its an older model but much nicer then the one we had. Plus its HUGE.   Last night also brought me......


I was so beyond happy to reach 1k...... I am thankful for all who have joined me in this cooking journey. Believe it or not my Public School experience was a bad one. My teachers had ZERO faith in me. Many teachers told me that I could never grow up to be anything successful,  could never read a recipe or be able to cook.  Yeah sure glad my mom had faith in me and helped me succeed. I do need to say that there was one teacher who did her best to help me. She passed away this year, but she did help.  My mom never doubted my abilities and for that I am thankful. She taught me how to cook, I can read recipes, I cook awesome....Not to mention my blog has reached 1000 fans. I guess some people actually do have faith in me. I know its not right but most of the time I wanna rub it in their face. I left school and was home schooled from 8th grade on. Best choice that could of ever happened to me.  Thanks so much to all my 1000 fans who believe in me, who love to read my stuff, laugh with me, and send prayers when I'm having a rough time.  This blog has been awesome for me. It has given me a creative outlet I needed.  When I started this I just thought it'd be some close family, and a few friends who wanted my recipes. It has now grown to over 1000 fans. For that I am truly thankful. I look forward to sharing more recipes with you. Speaking of recipes, here is the Portuguese Cucumber Salad


1 Cucumber chopped in dices
1 half of a purple onion
1 Pint of tomatoes
1/2 Cup Red Wine Vinegar
1/4 C of Olive Oil
Salt and Pepper

Cut up tomatoes in half and then in half again.  Dice up cucumbers in dices, and chop thinly sliced onions. Mix together in a bowl. Pour in your half cup of red wine vinegar(less if you do not like it really potent), olive oil, then salt and pepper to taste. Mix. Chill in the fridge for at least an hour as it helps it blend together. Enjoy. This is a fantastic recipe for dinner. Its so nice and cool. Plus vinegar is very healthy for you.

  1. This looks good, I may use less vinegar, I'll taste & add, I do it often, anyway.
    I'm happy you reached 1000 'likes'. I enjoy your posts, recipes & blog. Sorry your school experience wasn't all it should have been, don't blame you for wanting to rub faces in your success, but I always figured that lowers us to their level & we're better than that. lol

  2. Add Fresh Mozzarella...some Avocado. Change the red wine vinegar to balsamic vinegar and you have my favorite summertime salad!
