Hushpuppies from Heaven

Your probably wondering about the title well there is a story behind it :-) Trust me :-)  Anyhow, I love hushpuppies but haven't had them in a long long time. So thanks to the inspiration of a fan I decided to play around.

Growing up we lived close to a Long John Silvers and of course they serve Hushpuppies. My dad HATES them, however when we were not looking suddenly hushpuppies would appear on our plate. When we asked he said it came from the sky. So we dubbed it Hushpuppies from heaven. Its a memory that makes me smile and one I hold close to me. So I named this recipe Hushpuppies from heaven :-) Love you Dad :-)

Hushpuppies
1 C Yellow Cornmeal
1/4 C Flour
1 1/2 Tsp Baking Powder
3 TSP Garlic Sea Salt
1/4 C Chopped onion
1/3 C Bacon
1 egg slightly beaten
3/4 C Milk

In a bowl mix all your dry ingredients. Then add your milk and egg. Slowly and GENTLY mix it. DO NOT over mix. Set aside. In a pan pour in about half a pan of oil. Heat it up till its hot enough to fry something. Now take a greased spoon OR cookie scoop and scoop it into the hot oil. Take a slotted spoon and on occasion roll the hushpuppy around till its golden brown. The oil will be hot enough when they quickly rise to the top of the oil and cook.  Make sure they are evenly brown. Take out and put on a paper towel.
