Double Decker Patirotic Pizookie


Welcome to another edition of Red White and Blue Creations from our Kitchen.  I'm happy to bring you a Double Decker Patriotic Pizookie! The awesome thing about our group is we can bounce ideas off each other, give ideas to one another. Sometimes when our brain is fried we can go there and get a new take on things. That's what happened to me this week :-) This is an amazing ice cream sandwich topped with a homemade blueberry syrup, with vanilla ice cream inside two sugar cookies.  Of course to top it off is three cherries. This recipe is easy. I do have a confession.....I can not make sugar cookies no matter how hard I try. So with this recipe I bought pre-made sugar cookie dough. 

Double Decker Patriotic Pazookie
12 Sugar Cookies
1 Pint of Vanilla Ice Cream(softened)
1 Pint Blueberries
3 T Sugar
4 T Water
1 Tsp Corn Starch

Bake your sugar cookies and allow them to cool completely. While they are baking make your blueberry syrup. In a sauce pan put your fresh blueberries, sugar and water. Stir it up. Let it come to a roiling boil.  Add your cornstarch and cook till it has thickened up. Pour into a bowl and put it in the fridge to let it cool completely.  Take your sugar cookies out and let them cool. You will need two for the sandwich.  Take your ice cream out and let it soften. Take your cooled sugar cookie and take two spoon fulls of ice cream and make sure it covers the cookie. Set it aside. Take your cooled blueberry syrup and pour over the top of the ice cream sandwich. Top it with three cherries.

If you are making it for a dinner with friends and family make the sandwiches and freeze. Add blueberry syrup later. Eat and Enjoy!
