White Wine and Fontina French Onion Soup



May's theme is moms favorites. One thing that I remember my mom always loving was onions. She eats onions on everything and even just sits and eats onions. When I first started making french onion soup, I made it for her and she loved it. So when we chose our themes May was "Moms favorites". I knew I needed to make something with onions.  So I recreated french onion soup in honor of her. If she was here on Mothers day I would so cook this for her. Her being so far away makes it so hard. So here is to my mom, whom I love and look up to!!!

White Wine and Fontina Cheese French Onion Soup

2 Vadilla Onions Sliced thin
1 Purple Onion Sliced thin.
(6 C Total)
1/3 C Oil
1 T Sugar
1/2 Tsp Pepper
1 T White Wine
6 C Beef Broth
1 Loaf of herbed baguette
1 C Fontina Cheese shredded
1 C Italian Shredded Cheese

In a sauce pan put your thinly sliced onions in with oil, pepper and sugar. Cook till they start to turn golden. Add your 1T white wine. Cook it down. Add your beef broth. Let it boil, then turn it down and let it simmer for half hour. Put your soup in a oven/broiler safe bowl. Shred your fontina cheese and Parmesan, Slice your favorite baguette or other bread. Top with cheese. Cook it till golden brown. ENJOY
