Terryaki chicken wrapped in bacon


Terryaki Chicken wrapped with bacon on a grilled slice of pineapple

I was just going to make ordinary terryaki chicken, but midway through the chicken cooking, I got an idea. I decided to wrap bacon around it. :-) It turned out yummy :-)

4 Boneless skinless Chicken Breasts halved.
8 slices of bacon
Teryyaki marinade (enough to cover the chicken in a baggy)
1/2 C. Brown Sugar
1/2 C. Pineapple Juice
Sliced canned pineapple


Slice the chicken so you have 2 thin slices. Put them in a baggy. Pour marinade in it. Marinade it for an hour. Put it in the oven. In about half hour, take it out and wrap the bacon around it. Secure it with a toothpick. Then sprinkle 1/4 C of brown sugar over the tops of the bacon chicken. Pour 1/4.of pineapple juice on top. Due the same for the second batch of chicken. Or if they are all in one pan, you can just use the half of each. I just had to use two pans. Bake until the bacon is done. 

I took slices of pineapple and grilled them on my stove, using my griddle. 

It was super good :-)
