Pumpkin pie Muffins with Pumpkin Cream Cheese Frosting


No this is not one of my food dreams BUT I did make this recipe one day when I was doing house stuff. Something has to keep me entertained. So yesterday during Storm Sandy I decided to make these muffins. They turned out pretty good....The muffin isn't so sweet but the frosting makes up for it.

Pumpkin Pie Muffin with a Pumpkin Cream Cheese Frosting

1 1/4 Flour
1 Tsp Baking Soda
1/4 C. Butter(softened)
1/4 C Sugar
1 1/2 C Pumpkin 
2 1/2 Tsp Pumpkin Pie spice
1/2 Tsp Ground Clove
1 Tsp Maple syrup
1 Tsp Molasses
1 Egg

In a bowl cream your butter and sugar. Then add your egg, pumpkin, molasses, and maple syrup.. Mix. In a bowl mix your flour, baking soda, and spices. Pour into creamed mixture. Fill muffin tins all the way to the top as they do not rise much. Bake at 400 till done. You can stick a tooth pick in it and it should come out clean.

Pumpkin Cream Cheese Frosting

1 8 oz Cream cheese softened
1 1/2 Cup of Confectioners Sugar
1/2 C Pumpkin
2 T Softened Butter
1 Cinnamon Stick for garnish
Mix all of those till combined. 

When Muffins are cool ice them with a piping bag or zip lock. Take a zester and grate your cinnamon on top of each muffin lightly.
