Chicken Pot Pie redone

This chicken pot pie is one of our favorites. I usually hate crust and its hard for me to make it homemade. So I cheat and use Pillsbury Ready to roll crust. It comes two in a box.

4 Boneless Skinless Chicken Breasts
2 Cups of Mixed veggies or a bag of Frozen Mixed Veggies
1 3/4 C of chicken broth or One can of broth.
1/3 C. Flour
1/3 Butter
2/3 Cup of Milk
1/3 C of Onion
1 Tsp of Celery Seed
1/2 Tsp Celery Salt
1/2 Tsp Garlic Powder
1/2 Tsp Onion Powder
Sprinkle of Pepper
2 Pie Crusts

Take your chicken and cut it into chunks and throw it in a big sauce pan. Put in your mixed veggies, and put enough water where it covers it. Boil it till the Chicken is done. Drain it and set it aside. In a pan melt your butter and saute your onions till they are browned. Add in your flour, salt, and seasonings. Stir. Then slowly add your milk and broth. Keep whisking till its a thicker sauce. Remove from heat. Take one of your crusts and put it in your pie plate. Put your chicken and veggie mixture in the crust. Pour your sauce on top of the chicken/veggie mix. Cover with the second pie crust tucking the sides in. Slice two slits in the middle. Bake it at 400 till golden brown and bubbling.

  2. I always just do can of veggies, 1 can of cream of chicken soup & about cup of broth from boiled chicken.

I like to use dark meat bc it makes a better broth, but use whatever I have lol...Boil & shredd of the bone & add to mixture!

But I am def gonna have to try this one out too! Thanks for sharing :)
