Vegetable Soup

Vegetable Soup

Growing up my mom always made this vegetable soup. I always loved it, and now that I have a family of my own, I make it for them. We all think its great. Here is the recipe for it. This recipe calls for barley but it can be omitted. Its an easy but great recipe.


1 lb. hamburger browned
1 Big Can of V8 Juice
1 can of Carrots 
1 can of Green Beans
1 can of Peas
1 can of Corn
2 cans of whole potatoes (or you can just use raw potatoes and cook em first. I just have problems with having hard potatoes in the end haha)
1/2 C barley

Brown your hamburger then drain it and set it aside. In a pan or crock pot put your v8 juice, canned veggies ( drain all but two of the canned veggies, you'll want the added juice), and barley in it. Add hamburger and stir up. Heat up till barley is done, and soup is hot. If you are using the crock pot you can cook it for an hour or two on low. Or an hour on high.
