Snickerdoodles, Sweet Chili Chicken wraps


Growing up I LOVED snicker doodles, but my sister hates cinnamon (I'll never understand why, shes just well crazy  I mean adorable sister. Love you Hannah). So they were not made a lot. Now that I'm an adult and its one of Js favorite cookies I make them a fair amount.  So soft and so good.  I love the smell of baking cookies :-)

Cute kid cooking story: My two year old daughter Karina came in the kitchen while I was mixing the dough with my mixer(and wishing I had a kitchen aid ) she came to hold my cord. After I was done mixing she runs into tell her sister Meghan " I DID IT I DID IT...I helped Momma bake cookies"...It was the most adorable thing ever. In reality she was just holding the cord but to her she was helping me out. I love my kiddos.

Now onto last nights dinner. I had meant to write this blog post last night. However by the time I got supper done, kids in bed, house and dishes done I was beat. So I decided I needed to spend time with J because we really do not get much time with each other during the day. So as always my family comes first :-)

A few months back J and I made up the idea of chicken wraps. Well they have probably been made before but we never used a recipe for this. We alternate between buffalo and sweet chili.

Chicken Strips:
3 boneless skinless chicken breasts. Cut up into strips.
About 1 1/2 cups of flour(just for coating)
1/2 Cup of milk
Salt
Pepper
Oil
1 Jar of Franks Sweet Chili sauce(its located right by Franks Red Hot sauce) You can also use Buffalo sauce too.

Get your a pan filled with oil (or deep fryer) heating up. Cut up chicken strips. Dip them in the flour, milk then back to the flour. Deep fry for just a few minutes till the chicken strips are golden.  Once you have all the chicken strips deep fried then dip them in your sauce. Lay on a baking dish. Bake for about 5 minutes at 350.

For the Wraps

Tortillas
Sauced chicken strips
Cheese
Tomatoes(optional)
Onions(optional)
Ranch or blue cheese dressing

Lay your tortilla flat in the middle put some dressing down. Put 2 or 3 chicken strips down the middle of it. Top with cheese and rest of toppings. Wrap up and enjoy.

Onion Rings:
Oil for frying(can use the same oil as chicken unless you want to use a different batch)
2 Vedalla sweet onions
1 1/2 cups of flour
1/2 Cup of milk..

To make the batter put in flour and add enough milk where its semi thick and will stick to the onions. If its to runny keep adding a Lil flour till its the right consistency. I just kinda add etc till it looks right. I add Goya's All purpose seasonings in the batter. Dip onions in it till the ring is coated in the batter. Put it in the oil. Cook till golden brown.
