Monday Dinner

Today I am making Chicken wraps with a sweet chili sauce and roasted red potatoes. This recipe was formed a couple weeks ago when I was bored with our normal food.  Although we normally use a Red Hot Mild Buffalo wing sauce instead of the sweet chili. However, we thought we would try something different this time. It is really good :-)

Here is the recipe :-) I'll post pictures after supper to show you :-)

3 chicken breasts sliced into semi wide strips ( Or you can buy the boneless skinless chicken strips in the store)
Franks Red Hot Sweet chili sauce( your you can do bbq or buffalo wing sauce)
1 cup of milk
1 cup of flour
Seasonings to taste
Oil
Flour tortillas
Cheese( just enough to put in your wrap)
Ranch dressing
Tomatoes

Get either your fry daddy heating up or a pan of oil. Make sure its hot as you don't want the chicken just laying in it soaking up the oil.  While thats heating up slice the chicken into strips, not to thin. After you cut them up, then in a plate or even a baggy put the flour in it. You can put salt,pepper and other seasonings if you want. Put the chicken in the flour. Then take them out and dip them in the milk, then back in the flour. After they are done begin putting the strips into the oil, cook them for about 5 minutes. They are done when they are a nice golden brown. Let them drip dry and then pour the sweet chili sauce in a containor. Dip each chicken tender in teh sauce to coat. Preheat oven to 350. Place the coated chicken strips on a cookie sheet. Bake it for about 10 minutes. Remove from the oven. Let it cool. Chop up lettuce, and tomatoes. Take your flour tortilla, and you can either put each chicken strips on the tortilla or you can slice them. Put our toppings and then put ranch dressing on it.. Wrap it up and enjoy!  I make some kind of side with it. I think with this week we will have roasted red potatoes. Look below for the recipe :-)

Roasted Red Potatoes

About 10 red potatoes
Olive Oil
Salt
Pepper

Directions
I cut up the red potatoes into chunks that will easily cook. In a baggy I pour about a cup or so of olive oil in it. Put in the chunks of potato. Close it and shake. Take a cookie sheet and wrap it with aluminum foil. Pour the potatoes on it. Then Salt and pepper the top of the potatoes. Preheat the oven to 350-400. Put them in the oven and bake them for an hour or until they are soft and golden brown :-) Enjoy!
