"Chicken and sticks"

Growing up my mom always made this fried chicken that was GREAT! I mean we all loved it when it was for dinner :-) That being said as an adult in my own house I make fried chicken with boneless skinless chicken breasts. The times I have used chicken with bones in it they do not cook right. So I have stuck with the boneless skinless. Well, we went to my brothers wedding, and that week my mom made us fried chicken dinner for supper. All four of us were home :-) Well sitting to eat my daughter exclaimed " Papa look this chicken has a stick in it"....So now and forever fried chicken is and will be known as " Chicken with sticks" :-)

Pioneer Woman Cookbook signing!

Has anyone heard of Pioneer Woman Ree Drummond? She is great! I love her cookbooks :-) Anyways, when I found out she was going to do a book signing in Boston WHILE my mom was here...we had to go. Both of us have her first cookbook :-) So off we went. It was a LONG LONG day, but one I wouldn't trade :-) I got to meet her, and she signed my cookbook I bought of hers, and a recipe card :-)

Kids in the Kitchen

                                  Kids in the Kitchen
My mom and my 3 year old daughter started a cupcake tradition years ago :-) So now every time they are together they bake cupcakes. Here are some pictures from that day :-) They made box mix Funfetti with pink cream cheese frosting. I probably will not be posting the Lazy Daisy cake as it didn't turn out that great. LOL For now enjoy baking pictures!

Roasted Whole Chicken and Cheesey Potatoes

Growing up my mom always made a whole chicken in the crock pot. As an adult I have never cooked my chicken in the crock pot, I cook it in the oven. Here is the recipe I made up for my chicken :-) It has great flavor and makes great broth.

1 Whole chicken
1 Stick of melted butter
1/4 cup of minced garlic
Sea Salt
Cracked Pepper

Put your whole chicken in the dish that your cooking it in. Make sure that you have enough room for the broth. Next salt and pepper the whole thing. Not a lot just enough season.

Then rub minced garlic all over the chicken, and pour the melted butter on top. Cover with aluminum foil for the first couple hours. I generally buy the chickens that have a pop up timers, but if you do not have that then cook it till its 165. Bake at 350 or 400 depending on your oven.

Also a little tip, the broth is amazing so take an ice cube tray and put the broth in it...then freeze it. Once frozen break apart and put into baggies. You will have broth for the next day.

                                                          Cheesy Potatoes

*J grew up with this dish. When I got the recipe it came with WAY to much cheese. So I decided I'd do Cheddar jack and do only 4 cups of cheese. He says mine tastes great and sometimes better then the others :-) This is a great dish :-)

1 bag of Ore Ida Hash browns (make sure your hash browns are thawed out)
1 small onion
1/2 melted butter
1 large container of sour cream
1 can of Cream of Chicken Soup
4 Cups or 2 bags of cheese( I use Cheddar Jack from Sorento's)
Salt, pepper and Garlic salt for seasoning

In a bowl dump your hash browns in, then chop your onion and add it. Dump in your butter, salt, pepper, garlic salt. Mix it up. Then add sour cream, cream of chicken. Then add cheese. Mix it up. Put it in a 9x13 dish. Bake at 350 till golden brown.

Potato Packets

Good Evening Everyone!! Tonight for supper J grilled out...honestly Im not a grilling person. I love grilled food, but NEVER have done it myself. Besides its his hobby :-) Tonight he grilled out chicken. The girls had BBQ Chicken, J had Portuguese chicken and I had Carribian Jerk chicken..SOOO GOOD :-)

With the chicken I did a potato packet! :-)

Ingrediants:

6 Potatoes diced
1 onion
Salt
Pepper
Basil
2 Long sheets of aluminum Foil
Non stick spray

1. Cut up potatoes small but not to small. Then chop up your onions..they can be in chunks if you wish.

2. Take out two long pieces of aluminum foil. Making a plus sign.

3. Put potatoes/onions in the middle.

4. Sprinkle salt, pepper and basil on top.

5. Cut up butter into chunks all over the potatoes. Now take the middle piece of aluminum and wrap it up tightly. Take the other piece of aluminum foil and wrap it. Making sure its wrapped tightly. Put it on a cooking sheet and bake for an hour :-)
