Banana Coconut Coffee Cake


Its snowing! Yes I said it! It's snowing. We started out only suppose to get rain, then it moved to 1-3 inches. Now its 10 inches. On top of our 6+ feet. I'm so over snow. However, while the white stuff was falling down, it came to mind that I don't have a coffee cake recipe. So I decided to make one. I had some banana's that needed used. So I created this awesome Banana Coconut Coffee Cake. I know its probably not normal but its good.

Banana Coconut Coffee Cake
1 1/2 C Flour
2 1/2 Tsp Baking Powder
1/2 Tsp Salt
1/2 C Sugar
1 egg
1/4 C Oil
3/4 C Milk
2 Banana's Mashed

Toppings:
1 C Coconut
1/2 C Brown Sugar
4 Tsp melted butter
2 Tsp Cinnamon

In a bowl combine your flour, baking powder, salt, sugar, egg, oil, milk and banana. Mix till combined. Pour in a baking dish. In a bowl combine coconut, brown sugar, cinnamon and melted butter. Combine and then add the crumble to the top of the coffee cake. Bake at 350 for about half hour or until a knife comes out clean. Eat and ENJOY
