Sunrise Muffins


Hello Everyone, I do realize it's been awhile since you have all had a new recipe from me. I'm finally done unpacking and all. However I kinda lost kitchen mojo with all that has happened. So now that we are all settled in, I have been fighting to get back in :-) BTW We love our new place. We live out in the country now, and not on main street. Thank goodness. My kids get to play outside and I don't have to worry :-) Best feeling in the world. Also I have an oven with a window and a light....I was so giddy when I saw that. Hahaha :-) To break my kitchen mojo I made muffins. These are not just any muffins. They are Sunrise Muffins. They have chocolate chips, orange juice and BACON :-) I named it Sunrise Muffins. I enjoy chocolate, orange juice and bacon. So why not combine it for breakfast. These have a nice orange flavor with the chocolate but are not over powering. 
*Note you can skip the bacon if you want, but with the chocolate it helps give  saltiness to the muffin*

2 Cups Flour
1/2 C Sugar
1/2 tsp Salt
1T of baking powder
1 egg
3/4 C Milk
1/3 C oil
1/2 C Chocolate Chips
2 T Orange Juice
Zest of Half an Orange
Bacon to top

In a bowl put your ingredients. Mix well. Pour ingredients into a muffin tin....I filled them about half way. If you want you can now top them with diced bacon. Bake at 350 for about 10-20 minutes. Just keep an eye out for them.  Let them cool and enjoy!
