Lemon Bars

Lemon Bars

I came across thsi recipe awhile back with intentions to make it. Today I looked at the recipes and read the reviews...they were not so hot. So I figured I'd tweak the recipe to make it better. The original recipe is here:
Original Lemon Bars. The reviews said they lacked the lemon flavor...So I enhanced it. :-)

1 cup Gold Medal® all-purpose flour
1/2 cup butter or margarine, softened
1/4 cup powdered sugar
1 cup granulated sugar
2 teaspoons grated lemon peel, if desired
4 tablespoons lemon juice
1/2 teaspoon baking powder
1/4 teaspoon salt
2 eggs

In a bowl put your flour, powdered sugar and softened butter add in a tsp of your lemon zest. Mix well and smash it to the bottom of greased  8x8 pan. Bake 15 minutes, then take out of the oven. In a bowl mix in 4 tablespoons of lemon juice, 1 tsp of zest, eggs, baking powder,salt and sugar. Mix for 5 minutes till it's light. Pour it on the crust and bake at 350 for 30 minutes. Cool completely and dust with powdered sugar.
