Pineapple Upside Down Cupcakes


Pineapple Cherry Upside Down Cupcake
Makes 12

I frequently dream of food, and one night I had a dream that I made these. Ever since then they have been on my mind. So I thought I'd recreate them in real life. Haha!! They actually came out great...I was very nervous. 

Cupcake Batter
1 C. Flour
3/4 C Sugar
1/4 C Butter
1/2 C Milk
2 Tsp Baking Powder
1/2 Tsp Salt
1 Tsp Vanilla
2 Eggs

In a bowl cream your sugar and your butter(make sure its softened). Then add egg one at a time. In another bowl mix up your flour, salt,  and baking powder. Put in with your creamed mixture. Mix it up and pour in milk slowly. Add in Vanilla. Set aside.

In a muffin tin grease them really well with butter/ or if you have Pam. Set aside. 

Pineapple Ingredients:
1 large Can of Tid Bits  Pineapple well drained
1 Stick of melted butter.
Maraschino Cherries
Half cup of brown sugar.

Take your muffin tin and pour a little melted butter in there. Probably about 1/2 Tsp. Then take about another 1/2 Tsp of brown sugar and put in the bottom of each cup. Make sure to spread the brown sugar. Put in pineapple, about a tsp and smoosh it on the bottom. Put a cherry in each. Then take your yellow cupcake batter and pour over the top of each tin. I do a big spoon full on each. Just make sure its covering the pineapple. Bake at 350-400 till the tops are golden brown, and the cupcake is cooked. Take out of oven and let cool for a few minutes. Take a cookie sheet, and put it on top of the muffin tin. Take oven mitts and do a flip by holding both sides. All of them should come out. Let cool on cookie sheet for a few minutes. Then transfer to a wire baking rack. Enjoy!!

  2. I watched these beauties come through Facebook. One of my all time favorite cakes is pineapple upside down cake. With cupcakes I would have more portion control. Perfect recipe to share at Foodie Friends Friday. Thank you!
