Tuscan Pork Loin

Tuscan Pork Loin

We are always on the look out for different dinner ideas....so I came up with this :-) This is Tuscan Pork Loin :-) It's a 2 day thing so make sure you have time. :-)

Tuscan Rub
1 Jar of Extra Virgin Olive Oil
Jar of McCormick Tuscan Gourmet Seasonings
1 Pork Loin

In a bowl pour a cup of olive oil  in a bowl. Then add 4 T of the seasoning. Sit it out for most of the day. You can cover it with aluminum foil. Set it aside.

At the end of the day, take your pork loin and put it on a sheet of Plastic wrap. Take a basting brush and brush on the oil/Tuscan spice mixture. Make sure the bottom, top and sides are heavily coated with the spices. Wrap it up with the plastic wrap and put in the fridge overnight. 

The next day, place it in a baking dish. Sprinkle some more of the Tuscan seasoning if you like. Then sprinkle with a pinch of course sea salt. Cover the pan with aluminum. Bake for 3 1/2 Hours  and then take the aluminum foil off and let it bake for an hour more. Take the baster and suck up some of the juice and pour it over the top of the pork loin. You'll want to do this a lot through the baking. Bake at 350 for 4 1/2 total hours if you have a large one. If you have a meat thermometer  please make sure it's at 145 internal. Take it out and let it rest. Slice and enjoy

Coconut Cream Cheese Crunch


So I had Cream Cheese that I needed to use, so I thought I'd experiment in the kitchen. I tried a few things, didn't work out. So then I tried again and came up with this :-) It has roasted coconut and chopped walnuts on top. So I hope you enjoy!!!

Ingredients
2 Bags of Dark Chocolate Chips
1 Package of Coconut  
1 3/4 C Confectioners Sugar
1 Tsp of Heavy Cream
1 8 oz bar of Cream Cheese
Bag of Walnuts
1 Tsp Vanilla

In a double boiler or microwave melt one bag of your dark chocolate chips. When they are melted let it cool for a bit.. Get a cookie sheet and line it with parchment paper. Then take your chocolate and pour it on the lined cookie sheet. Spread it out smooth. Take a handful of chopped walnuts and sprinkle on top of the chocolate. Put in the freezer till its hardened. Put the rest of the coconut on a cookie sheet that's lined with aluminum foil. Bake at 450. Keep checking it and stirring as not to burn it. After about 6 minutes or until golden brown. Take it out and let it cool  While the chocolate is  in the freezer, put your cream cheese, 1 1/2 C Coconut, 1 tsp heavy cream, confectioners sugar , and vanilla. Mix it until smooth. When your chocolate is hardened, then take it out and spread the coconut mixture on top. Make it smooth. Put it in the freezer. Then melt the second bag of chocolate, When its smooth set it out to cool just a bit. Take out your coconut mixture and pour the last bag of melted chocolate over it. Top with your roasted coconut and walnuts. Put it in the freezer. Chill till hardened and chop into bars.

Caramel Apple Cheesecake


Awhile back I posted that I wanted a cheesecake. Tons of people gave suggestions. I got one suggestion from a fan Dave Young. He mentioned a Caramel Apple Cheesecake. I got hooked on the idea. So I formed this recipe. I hope you enjoy it as much as we did :-)

1. Make your caramel sauce...I used this recipe for Salted Caramel  from Hugs and Cookies but I left out the extra salt. I love this caramel :-) You need to let this cool down.
Crust:
2 C. Crushed Graham Crackers
1/2 C. Butter
2 T Sugar
TIP: I learned this from friends, when you use your spring form pan cut a circle of parchment paper for the inside. It helps it not stick.. 
Crush your Graham crackers to crumbs. Add in melted butter and sugar. Put it in your spring form pan, and smash it down. Bake for 10 minutes.  Take out while you make the batter. 

While its baking you can mix up your cheesecake

Cheesecake Batter
1 1/2 C of Finely diced apples( I used Granny Smith)
(Make sure you pat them dry)
2 C. Sour Cream
4 Boxes of Cream Cheese(softened)
6 Eggs
2 Tsp Vanilla
1/2 C. Flour
1C Sugar
3 Spoonfuls of caramel sauce
In a bowl mix your cream cheese, then add your flour and sugar. Add eggs one at a time beating till each is done.  Add in your sour cream, vanilla. Fold in the finely diced apples. Pour into the pan...Now add your caramel sauce, and take a butter knife and swirl it around.

Now you can slice your apples thin like this and put it on it if you want, your you can leave it off. Again make sure you pat the apples dry so to leave out the extra moisture.

Now put it in the oven at 375 for 55 minutes....Take out and let it cool for 20 minutes. Release from the spring form pan. Let it chill for 2-3 hours.

Topping:
Drizzle of Caramel
3 Handfuls of walnuts(can omit if you want)

 When it has chilled, you can add chopped walnuts, and then drizzle the caramel sauce over your cheesecake. 

Slice it and serve w/ whip cream and a sprinkle of cinnamon.

Beefy Biscuit Cups


Good Evening Everyone,
I hope you enjoy the new look of the blog. It is more springy, and I think much brighter. I now have a search button, and a blog archive. 

Tonight I bring you Beefy Biscuit Cups. When I was younger my brother and I use to make this a lot. We tried several different type of biscuits and found Grands works much better. This is a simple recipe. So please enjoy it. 

Tube of Biscuits( Use Grand they are bigger)
1 jar of Spaghetti sauce
1 lb Hamburger browned
1 package of shredded cheddar cheese
Muffin Tin

Brown your hamburger and mix in spaghetti sauce. Spray your muffin tin so they come out easy.  While its cooking stretch out your biscuits till they are flattened and round. They need to be semi large. Put them in the muffin tin so it forms a cup. When your meat sauce is done then you add meat sauce to each cup. Bake at 350 till the biscuits are golden brown. Top with cheese and bake for a few more minutes till cheese is melted. Eat and enjoy!!.
