Growing up my mom always made a whole chicken in the crock pot. As an adult I have never cooked my chicken in the crock pot, I cook it in the oven. Here is the recipe I made up for my chicken :-) It has great flavor and makes great broth.
1 Whole chicken
1 Stick of melted butter
1/4 cup of minced garlic
Sea Salt
Cracked Pepper
Put your whole chicken in the dish that your cooking it in. Make sure that you have enough room for the broth. Next salt and pepper the whole thing. Not a lot just enough season.
Then rub minced garlic all over the chicken, and pour the melted butter on top. Cover with aluminum foil for the first couple hours. I generally buy the chickens that have a pop up timers, but if you do not have that then cook it till its 165. Bake at 350 or 400 depending on your oven.
Also a little tip, the broth is amazing so take an ice cube tray and put the broth in it...then freeze it. Once frozen break apart and put into baggies. You will have broth for the next day.
Cheesy Potatoes
*J grew up with this dish. When I got the recipe it came with WAY to much cheese. So I decided I'd do Cheddar jack and do only 4 cups of cheese. He says mine tastes great and sometimes better then the others :-) This is a great dish :-)
1 bag of Ore Ida Hash browns (make sure your hash browns are thawed out)
1 small onion
1/2 melted butter
1 large container of sour cream
1 can of Cream of Chicken Soup
4 Cups or 2 bags of cheese( I use Cheddar Jack from Sorento's)
Salt, pepper and Garlic salt for seasoning
In a bowl dump your hash browns in, then chop your onion and add it. Dump in your butter, salt,pepper, garlic salt. Mix it up. Then add sour cream, cream of chicken. Then add cheese. Mix it up. Put it in a 9x13 dish. Bake at 350 till golden brown.

ReplyDeleteYou cover with foil and cook for the first two hours and the oven is 350° to 400°? Then What? Uncover the chicken and cook for how long? Covering doesn't produce any crust or crunch and cooking that long in oven would make the chicken very dried out. Could you explain?
I uncover the chicken after the 2 hours. Then I let it cook in the oven its done. Taking the aluminum foil off helps crisp up the skin. I cover it to keep all the moisture in. I also take my baster and pour broth over it every once in awhile. A whole chicken or at least mine take 3 or so hours to get done. So I cover it for 2 hours, then uncover it for an hour or so. My whole chicken has never been dry.
DeleteA whole chicken? Man, I might have to step up to the mommy plate and try to bake one! I've only made chicken with boneless skinless breasts for so long, the thought of a whole bird is scary! LOL ONE TIP: Try your potato recipe with French Onion dip instead of sour cream. (We have Kroger's here and I use their brand of dip.) It makes a wonderfully surprising change to the potatoes!
